Sustainable Cultivation
Our Chemlali olives grow in family-owned groves in Sfax, Tunisia—the same land cultivated since 1703. We use solar-powered irrigation systems, avoiding pesticides and chemical additives. The trees grow slowly under Mediterranean sun, developing intense aromas and rich polyphenol content.
Hand Harvest
Every olive is hand-picked at peak ripeness by experienced harvesters who understand the Chemlali variety. Gentle harvesting prevents bruising and oxidation, preserving quality from tree to press. We harvest only when olives reach optimal maturity—never before, never after
Cold Extraction
Within hours of harvest, olives are pressed below 27°C using mechanical cold extraction. No heat, no chemicals—just gentle pressure that preserves vitamins, polyphenols, and authentic Chemlali character. This is how traditional extra virgin olive oil should be made.
